Galeux d’Eysines Winter Squash (Cucurbita maxima ) is a French heirloom introduced in the 1800s from the town of Eysines near Bordeaux. The bright orange flesh is smooth, rich, and exceptionally sweet, with flavor that improves after curing and continues to develop in storage.
