Ideal for markets that require a thicker leaf for freezing, drying, or using fresh. Consumable blossoms: Separate the small flowers and sprinkle them on salads, dips, sauces, soups, stir-fries, and pizza. They also make a great addition to potato salad. The taste is reminiscent of a mild, sweet onion. Garlic Chives- Thin, flat leaves with delicate garlic flavor. Attractive white flowers in midsummer, in the second year of growth. The spice cinnamon is obtained from the young bark of the branches. All of these tubers are freshly dug from my own personal flower beds and herb gardens. Dandelions help provide nectar and pollen to honeybees and other beneficial insects. This is particularly important in early spring when they are one of the only plants that are in bloom. The dandelion leaves, roots, and flowers are all edible. The young flowers taste like honey, but they will become bitter when they mature. The flowers can be used in wine, jam, teas, or salads. Dandelion leaves can be eaten raw or cooked, but the youngest, greenest leaves at the center are best for raw eating. The dandelion root is a coffee substitute and makes a great addition to any landscape where you would like to create edible foraging or simply a nice habitat for bees to enjoy. Another bonus is that dandelions have roots, which can help to break up compact soils. The seed head is a beautiful puffball, which is sure to delight both young and old when they blow on it to disperse the seed.
