Shanghai Bok Choy Seeds Shanghai pak choi, also known as bok choy, is a type of Chinese cabbage that is commonly used in stir-fry dishes and salads. It has dark green leaves and white stalks that are crisp and tender. To grow Shanghai pak choi from seeds, you can follow these steps: Start by selecting a sunny location in your garden with well-draining soil. The soil should be fertile and rich in organic matter. Sow the seeds directly into the soil about 1/4 inch deep, and space them about 6 inches apart in rows that are 12-18 inches apart. Water the seeds well and keep the soil moist until the seeds germinate, which usually takes about 7-10 days. Once the seedlings have grown to about 2-3 inches tall, thin them out so that each plant is spaced about 8-10 inches apart. Water the plants regularly, making sure to keep the soil consistently moist but not waterlogged. Fertilize the plants every few weeks with a balanced fertilizer. Mulch around the plants to help retain moisture and suppress weeds. Harvest the pak choi when the leaves are about 6-8 inches long and the stalks are tender. Cut the stalks at the base of the plant with a sharp knife or scissors, being careful not to damage the surrounding leaves.
