It’s called Wild Spinach in Europe and very popular there.  Member of the Quinoa family can grow up to 10’. The leaves have a mild spinach flavor but are denser, packed full of just as many nutrients.  Use leaves in place of spinach for salads, in eggs, and soups.  My favorite is to coat them with olive oil and crisp them in the oven. Can also be frozen.  The seeds can be made into flour. The leaves can be picked as soon as they start to grow and all the way through late fall.
