Test Upland Cress (Barbarea verna) Check out our other listings! Upland Cress is a cold-hardy, biennial herb with round, glossy, dark green leaves similar to watercress. Though it is slower growing and slower to bolt than other cress varieties, it is also easier to maintain once established. Known as ‘creasy greens’ in the South, this leafy vegetable has a peppery taste that is great on its own or when mixed into a salad with other, milder greens. Also great on sandwiches and in soups and stews! Sow seeds indoors year round, or direct sow into garden from early spring to late summer for a continuous harvest. If direct sowing, plant shallowly (1/4 inch) in a block or wide band, about 15 seeds per foot. Keep soil moist as seeds are slow to germinate, and thin to 4-6 inches apart once the seedlings emerge. Will continue grow through mild winters if provided proper frost protection. 50 days to maturity.
