Microgreens, like most other superfoods that are consumed fresh, begin to lose their nutritional value rapidly after harvest. Microgreens are young vegetable greens that are approximately 1–3 inches (2.5–7.5 cm) tall. They have an aromatic flavor and concentrated nutrient content and come in a variety of colors and textures. Microgreens are considered baby plants, falling somewhere between a sprout and baby green. Garlic chives are graceful herbs with pretty white flowers. The combination of a chive-like appearance and strong garlic flavor makes garlic chives a popular seasoning. Chopped fresh garlic chives are found in recipes for Chinese dishes including stir-fries, and they are used in Japanese cuisine as well. With their white flowers, long green shoots, and lack of a bulb, garlic chives (Allium tuberosum) bear a strong resemblance to regular chives. That’s not surprising since both are members of the onion family. However, while the standard chive has a mild flavor similar to onions Chinese garlic chives are known for their strong “garlicky” flavor. Garlic chives like full sun, but they grow fine in partially shaded areas. Plants require fertile soil with a pH of between 6.2 and 7.0. Garlic chives are perennial in zones 3 to 10. They return every year and produce new green growth for you to snip and enjoy. You can direct-sow chives, but starting them indoors in the early spring gives you a head start on the growing season. Start growing garlic chive seeds about 6 to 8 weeks before your average last frost date. Many herbs, including garlic chives, need a good head start to the growing season because they take a long time to germinate. Turns out microgreens are not just a plain good-for-you food or a healthy garnish on salads and soups. Scientific research now proves that these tiny seedlings harvested and eaten when they are just a few inches tall are a real superfood packed with antioxidants and other health-promoting nutrients. The presence of oil helps improve the bioavailability of the fat-soluble nutrients in microgreens. Some people use glass jars to grow their sprouts. If you already have a glass jar and don’t plan on growing a bunch of sprouts at once, you can use this technique and just get a plastic lid that is designed to fit on wide-mouthed glass jars – specifically for growing sprouts. A mason Jar also works. Between “sprouting sessions” you will need to clean your sprouting jar. Be careful not to leave any soap or residue in the jar, as this can inhibit the growth of your next batch of sprouts. First, soak your seeds in a Vinegar and water solution, for 15 minutes to get rid of bacteria. Rinse well and soak the seeds in plain water overnight. The next morning, drain the seeds and place them in a mason jar. There are mesh lids made just for sprouting, or you can just replace the center part of the mason jar lid with cheesecloth or loosely woven muslin to allow air to circulate and excess water to drain. One to Twice daily, rinse and drain the seeds, placing your jar upside down within a bowl or tray to catch drainage. Within about 5 days, you can expect plump and flavorful sprouts. On the last day, place them in in a bright area, (not direct sun), being very careful not to let them dry out. Alfalfa is a perennial forage legume which normally lives four to eight years, but can live more than 20 years, depending on variety and climate. Alfalfa sprouts are the shoots of the alfalfa plant, harvested before they become the full-grown plant. Because they are so small, the sprouts contain a concentrated amount of certain vitamins and minerals such as calcium, vitamin K and vitamin C. Alfalfa sprouts are the young shoots of the alfalfa plant, eaten within four to seven days of germination. Along with many other sprouts, they are eaten as a health food and can be found sprinkled on sandwiches, mixed with salads, or added to stir fries. Since the seeds can be germinated in controlled environments year round, there is no specific season in which they are grown. Alfalfa sprouts grow quickly, sprouting in just 3 to 5 days. You can grow them in a glass jar or a small tray, and you only need 1 tablespoon of seeds to get 1 1/2 cups of sprouts. Height: Up to 3 ft.
