“COOL BEANS N SPROUTS” Brand. All about your Cress Microgreen! To reap the health benefits of microgreens, eat them immediately after harvest. Microgreens, like most other superfoods that are consumed fresh, begin to lose their nutritional value rapidly after harvest. Consider growing your own microgreens at home as this will allow you to decide exactly when you harvest your crop. Microgreens are young vegetable greens that are approximately 1–3 inches (2.5–7.5 cm) tall. They have an aromatic flavor and concentrated nutrient content and come in a variety of colors and textures. Microgreens are considered baby plants, falling somewhere between a sprout and baby green. Cress is a popular microgreen due to how easy it is to grow and the fact that it’s one of the most nutrient-dense greens out there. It even beats the Almighty Kale in terms of nutrient density according to the USDA. The peppery taste and unique leaf structure make it a chef favorite, used in soups, salads, and garnishes. For the home cook, cress is great for juicing, smoothies, or as an addition to a salad mix to add some extra spice. Unlike many greens, cress seeds are mucilaginous. This means that they’ll take in water and form a mucus membrane around their hulls, so they don’t need as much water when germinating as other seeds. Spray them very lightly, and make sure your soil mixture isn’t too moist. You’ll have low germination rates if you use too much water. After 3-4 days, your cress seeds will be sprouted and will be ready for some light. Make sure you continue to water, but do not overwater your cress. You’ll get mold and potentially drown out the fragile root systems, leading to either rot or just a poor yield! For cress, you’ll want to harvest around the 8-12 day mark. Make sure your greens are as dry as possible when harvesting as any moisture on them when storing is conducive to mold and rot. If they’re a bit moist, lay them out on a drying rack or towel until dry. Turns out microgreens are not just a plain good-for-you food or a healthy garnish on salads and soups. “COOL BEANS n SPROUTS” brand- Adzuki Bean Sprouting Seeds. Adzuki beans sprout into large shoots with a beautiful maroon color, making them not only a beautiful, but also nutritious and delicious addition to salads, stir fries, sandwiches and more. Adzuki bean sprouts are rich in vitamins E, C, B and A as well as calcium and iron. How to Sprout Beans: A wide-mouth quart canning jar: pretty self-explanatory or a Seed Sprouter. Sprouting jar lid: This is a lid that fits on your canning jar and has a mesh screen in the center. (You will need to purchase this separately) You can make your own version with a canning ring and a piece of cheesecloth or mesh screen. Water: You’ll want a double or triple water to beans ratio. Pour about 1/2 cup of beans into a bowl of cold water (use at least 1 cup of water). Let soak for up to 24 hours. Pour your bean and water mixture into your canning jar. Place your sprouting lid on the jar. Rinse the beans twice with cool water, draining the excess water out of the screen. Place your jar on its side out of direct sunlight. Somewhere on your kitchen counter should be perfect. Rinse and drain your beans and sprouts a few times daily, being careful not to leave excess water in the jar. If you’re using a sprouting lid, you can just invert your jar to let the water drain out. Depending on your bean and your desired sprout length, the sprouting process will take from three to seven days. When the beans in your jar are all sprouted, place the jar on your window sill to get some direct sunlight. Leave it there for a few hours so the sprouts color up a bit. If you’re sprouting some of the tougher beans (like black beans) you may notice some of the skins have come off, this is normal. You can remove them or leave them in, it won’t affect the sprouted beans’ flavor. Store the jar of sprouts in the refrigerator for up to a week,continuing to rinse your sprouts at least once each day.
